Shredded Chicken Tacos

Ingredients:

  • Healthy Scoops Shredded chicken 
  • Corn tortillas
  • Fresh cilantro, chopped
  • Diced onions
  • Salsa verde
  • Lime wedges
  • Queso fresco
  • Avocado slices

Instructions:

  1. Prepare the Bolognese Sauce:
    • Heat the Shredded chicken in a pan over medium heat until it is warmed through.
  2. Warm the Tortillas:
    • Warm the corn tortillas in a skillet over medium heat until they are pliable and slightly charred, about 1-2 minutes per side.
  3. Assemble the Tacos:
    • Place a portion of shredded chicken onto each tortilla.
    • Top the chicken with fresh cilantro, diced onions, and a spoonful of salsa verde.
  4. Add Toppings:
    • Sprinkle queso fresco over the top of each taco.
    • Add a few slices of avocado to each taco.
  5. Serve:
    • Serve the tacos with lime wedges on the side for squeezing over the top.
