Cottage Cheese Sweet Potato Beef Bowl

Ingredients (for one bowl):

  • 1/4 cup cottage cheese

  • 1 cup Healthy Scoops roasted sweet potatoes

  • 1/2 avocado, sliced

  • 1 cup Healthy Scoops Ground Beef

  • A drizzle of honey

  • A few peperoncini peppers (optional, for a tangy kick)

 

Instructions:

  1. Reheat your Healthy Scoops goodies:

    • Ground beef: Place in a microwave-safe dish and heat on high for about 2 minutes, stirring halfway through until hot.

    • Roasted sweet potatoes:

      • Microwave: Heat in a microwave-safe dish for 1-2 minutes, or

      • Air fryer: Pop them in the air fryer at 400°F for 4-6 minutes for extra crispiness.

  2. In a bowl, start with a generous scoop of cottage cheese as your base.

  3. Add your warm roasted sweet potatoes and ground beef.

  4. Layer with sliced avocado, a few peperoncini peppers for zing, and drizzle with honey for that perfect sweet contrast.

  5. Mix it up or keep it layered—however you like it!
