Ingredients:

- Bell peppers, tops cut off and seeds removed
- Cooked quinoa or rice
- Shredded cheddar cheese
Instructions:
- Preheat the Oven:
- Preheat the oven to 375°F (190°C).
- Prepare the Filling:
- In a skillet, mix the ground turkey with the quinoa or rice.
- Stuff the Peppers:
- Stuff the bell peppers with the turkey mixture, pressing down to fill them completely.
- Place the stuffed peppers upright in a baking dish.
- Top with Cheese:
- Sprinkle shredded cheddar cheese over the top of each stuffed pepper.
- Bake:
- Bake for 25-30 minutes until the peppers are tender and the cheese is melted and bubbly.
- Serve:
